Oatmeal Fruit Smoothie

Finally back to a normal week after a trip to Costa Rica and a week off for spring break flying solo with the kids.  This is a quick and easy morning breakfast smoothie.  My kids do not like plain oatmeal so this is a great way to sneak the oats in!

Ingredients1/2 cup dry steel-cut oats
1 cup frozen berries
1/2 cup ice cubes
Ground cinnamon, to taste
I like to add a little spinach in on some mornings as well!


Directions
  1. Put the oats in the blender and pulse until they reach a powdery consistency.
  2. Turn off the blender and add 1 cup water.
  3. Incorporate the remaining ingredients into the mix and blend until smooth. Serve.

Lemon Chicken Breasts

​I have about five different chicken recipes but was in need of a change. So got this one from my neighbor and it was pretty good.  

Ingredients

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves) - I use the kind from a jar
1/3 cup dry white wine - I used white wine vinegar
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Directions
Preheat the oven to 400 degrees F.

Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown.  Turn off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.

Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.

Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

Granola

I found this Granola mix at Costco.  It is gluten free with  puffed quinoa, oats, pumpkin seeds, sunflower seeds, and flaxseeds.  There is a recipe on the back for granola bars but of course consists of a lot of butter and sugar.  I took a different granola bar recipe with no sugar and made my own concoction. Surprising they turned out delicious.  My kids eat it like cereal with a little milk on top but I prefer it plain.   It would also be very good on some greek yogurt.  

How it's made:
Mix 1/2 a cup of coconut oil with a cap full of vanilla, 1-2 tablespoons of cinnamon,  1 tsp of xylitol, and 2 cups of the Granola Mix.  Then grab a spoon and enjoy!
