Strawberry Coconut Pudding

This is like a dessert in a bowl, only it's good for you.  
Some people do not like the texture of cottage cheese, but it is a great source of protein, and when you blend it the texture goes away.

Ingredients:
  • Low fat cottage cheese - 3/4 cup (substitute with lactose free yogurt for lactose free option)
  • Coconut milk - 1/4 cup
  • Strawberries (frozen) - 1/2 cup
  • Sweeten with xylitol - 1/4 tsp
Combine all ingredients in a blender and puree until smooth.  Easy!
Makes 1 large (270k/cal) or two small (135k/cal)

Banana Cream Pie Oatmeal

Sounds delicious right?

Ingredients: 
  • Low fat milk - 1 cup (can substitute with water or non cows milk for lactose free option)
  • Coconut milk - 1/4 cup
  • Large flake oats  - 1/2 cup
  • Water - 1/4 cup
  • Vanilla Whey protein - 1 scoop (25g)
  • Banana
Bring the milk and coconut milk to a boil
Add the oats
Simmer for 7-10 minutes
Combine 1/4 cup of water with protein in separate bowl and mix until dissolved
Pour protein into oatmeal and top with sliced banana
Add a little sugar free coconut on top!

This makes 1 large serving (523k/cal) or 2 small servings (261k/cal)
