Greek BBQ Skewers With Greek Salad and Tzatziki Dip

Ingredients:

• 1 Tbsp Lemon Juice
• 1/4 cup Olive Oil
• 1/4 cup soy sauce
• 1 teaspoon dried oregano
• 3 cloves crushed garlic
• chicken or pork
• Onion
• Peppers

Directions:

• combine all the ingredients together
• put in a zip locked bag with the chicken or pork to marinade.  You can even freeze it in the sauce and take out the day you want to BBQ
• place the chicken, onion, and peppers on the metal skewers and BBQ

We combined this with Greek Salad and pita with Tzatziki dip

Tzatziki Dip

Ingredients:

• Greek yogurt
• 2 cucumbers
• Salt and pepper
• 3 Cloves of garlic Chopped
• 3 Tbsp of Olive Oil
• Fresh lemon Juice

Directions:

• Peel the cucumber and pull out all the seeds
• Coarsely grate the cucumber and put in a bowl with a little salt.  Let it sit for 10-15 minutes and then squeeze as much liquid out of the cucumber as possible
• Add the garlic and oil to the yogurt.  Mix in the cucumber and season with lemon juice, salt and pepper.
